Founded during the Keio era (1865-1868), Shojiya is the oldest soba restaurant in Yamagata. The soba-making techniques established by the original founder continue to be followed today, and Shojiya soba is characterized by its firm, chewy texture. Shojiya is known for its "toichi" soba, which contains buckwheat flour and wheat flour at a ratio of 10:1 and is prized for its natural aroma and subtle sweetness of flavor. The soup these noodles are served in has evolved over the years while at the same time remaining faithful to Shojiya traditions, and we pride ourselves on a flavor resulting from quality ingredients with no chemical additives or preservatives.
