My favorite things about Yamagata

We offer flavors which have been nurtured over the course of more than 170 years and are imbued with a truly Japanese essence.

Maruju-oya (Kurazen-ya) / 丸十大屋「蔵膳屋」

"Maruju-oya opened its doors as a shop in the safflower trade in 1844, when Yamagata's safflower dye was as highly prized in the nation's capital as the Awa indigo dye of Tokushima. First operating as a shipping agency that transported safflower by ship down the Mogami River and then by sea to Tsuruga, from where the cargo was transported by land to Kyoto and Osaka, Maruju-oya shifted its business to the brewing of soy sauce in the mid-Meiji era, and continues to produce soy sauce, miso and other products today. At our Kurazen-ya cafe and shop, we offer an ""Amai Maruju"" line of sweets inspired by Maruju-oya products, such as mitarashi soy sauce puddings and soy sauce cream puffs. "

The puff shells are filled with the custard cream only after an order has been placed, and these cream puffs are available for takeout at all times and may be ordered in our cafe from 2:00–4:30.
(Best consumed on day of purchase.)"

  • Premium Pudding / プレミアムプリン

    350 yen (plus tax)

"For these luxurious little puddings, each of which is made with a whole egg yolk, we use mitarashi (sweet soy sauce), miso, or koji in place of caramel sauce. The natural sweetness of the ingredients shines forth in these puddings, and a subtle note of saltiness adds a delicious balance. Our koji flavor features a non-alcoholic amazake (""sweet sake"") that is made with rice koji produced from Yamagata's famous Tsuyahime rice, and its gentle sweetness will be a taste you never get tired of.
(Some puddings only available on a seasonal basis, best consumed by day after purchase.)"
